I think he pass a lot of wrong information in that short video.
I have pretty much all GFX to S adapters include the one he claim has right flange distance which is not. Fotodiox one is totally a mess up, dumb adapter and can’t reach infinity for all lanes pass 35mm. The flange distance is too thick, I think it is about 2-3mm thick that I have to send out to mechanic shop to trim it to be able to use 70/100/120/180.
And Kipon is thinner which is a good call to make sure all lenses can reach infinity. Yeh, lens will pass infinity but focal length will not change as those are lens design property. Which he described is most likely focus breath behavior for a non ideal lens design. Focus distance change field of view. This won’t bother me.
Now that I see this, this may explain why AF doesn’t work with phase detection as flange distance is not the same as lens designed. I should let Kipon know to focus on contrast detection for AF to see this can solve AF issue I saw. However, TBH, even with S, I seldom use AF as those are slow and hit or miss. If I can’t rely on them, they are useless to me.

I watched Marc Adesso's YouTube video on the Kipon adapter. He gave it a good review but mentioned that Kipon flange distance is shorter than it should be and thus the final focal length of the S lens for example 100mm he estimates when attached to the GFX photographs at about 110mm.
I noticed than Kipon has had the adapter on sale since December at $685.
I don't have any S lenses but for a longtime I desired an S3 system but opted for the GFX once the S3 system was abandoned.

Ha ha! Nice image! And I recognized the "baby hold" on the part of your wife, as I've seen my wife do this too. Not coincidentally, she's the only one I trust to hand off my camera to.
