(although I prefer saturated colours only now and then; easy to go too far here and sometimes I even like to tone down those bright saturated colours).
I know it's a generalisation (and therefore wrong in itself), but I sometimes wonder whether this is more "American" preference. I think I see this more with American photographers (especially landscape). Bold, strong saturated colours.

I vaguely remember reading this somewhere that older people increasingly like vivid colors. I cannot claim that this is true. If it is, then what you refer to as "American" preference for "bold, strong saturated colors" can be related to how old, on average, might be the photographers who post on this forum (and elsewhere). My guess is that most photographers here are in their 60's to 70's (and some are older). I am 65 years old, for one.
When processing in vivid colors, I like the colors to contribute to the overall emotional response of the viewers. Blue skies don't present much problem when shooting with the GFX100S II, unless they shift to cyan but this can be helped relatively easily. The greens are way more tricky. I dislike the (natural) yellowish green of some vegetation. I also don't like it when green shifts to blue that happens with some color profiles (Velvia is a bit prone to this).

Could be a connection between age and colour (-intensity) preferences. Don't know. I'm 100% sure that I'm not the youngest one here, on these forums.
At the same time landscapes from photographers like Peter Lik come to mind.
But then, also enough artists that use muted colours.
So, as I said before, probably just a (wrong) impression.

I do think it is still beyond a natural rendition, but I like the image very much. The colorations of the trees, foliage and grasses and the sky and clouds all work together well. Lovely image.

To change the subject, this is a casual portrait.
I like the GF55mm lens. The AF isn't the strongest part of the lens but the resulting images are lovely.
This one is with the lens wide open. ISO 160 is because the Dynamic Range is in Auto in the settings, and the camera decided to switch to DR200.
Processed in Capture One.
